BONE Appetit: Bow-WOW Banana Biscotti

All of the talk about Halloween treats the last few days reminded me that it’s been a while since I baked a batch of Bow-WOW Banana Biscotti, the perfect use for extra-ripe bananas. You can scroll down for the recipe, but I’ll also walk you through some of the preparation steps.

Combine the ingredients according to the directions below, and then it’s time to mix. Yum. It’s looking really good.

After you’ve mixed and kneaded and rolled and flattened, your baking sheets should look like this. Now you’re ready for the first round of cooking.

This is what your slices should look like after the first round of cooking. Then put the biscotti back on the baking sheet for the second round of baking.

Finally, my favorite part: the taste test. Another perfect batch of Bow-WOW Banana Biscotti. I cannot wait to share with my friends!

Bow-WOW Banana Biscotti Recipe

5 cups flour

1/4 cup peanuts, chopped

1/2 teaspoon baking soda

1 egg

1/4 cup vegetable oil

1-1/2 cups mashed banana (about 3 bananas)

2 teaspoons vanilla

water

Preheat oven to 325F. Place dry ingredients in a large bowl and make a well in the center. Blend egg, vegetable oil, banana, and vanilla. Add to dry ingredients and start to blend together. Add water, 1 teaspoon at a time, as needed to bring ingredients together. Knead by hand until mixed thoroughly. Form into two logs approximately 2 to 2-1/2 inches high. Flatten so that each log is 6 to 7 inches wide by 1 inch high. Place on a non-stick or slightly greased baking sheet. Bake for 30 to 40 minutes. Remove from oven and cool for 10 minutes. Slice into 1/2- to 3/4-inch slices. Place on baking sheet and bake for 20 to 30 minutes or until golden brown. Cool and store in an airtight container. BONE Appetit!
